Testing of the possibilities of the HACCP (Hazard Analyses and Critical Control Points) system principles for risk identification and assessment in wood branch has been carried out. Survey and visual observation methods were used for risk identification. For determining the significance of the Critical Control Points, the expert method was used. It was found that the risk assessment must be carried out separately for the risks of technical character and those connected with the technologies. The suitability of quantitative assessment scales of several risks for the specifics of the manufacturing processes in wood branch was tested. Special quantitative assessment tables were developed for the numeric values of the risks of technical character. For the assessment of the risks connected with the technologies, a quantitative assessment table was developed and a matrix made. The introduction of the HACCP system is possible in wood processing, and it can be implemented in 8 stages.
