Capsaicin and 8-nordihydrocapsaicin were converted into their ¦Â-glucoside and ¦Â-maltooligosaccharide (amylose conjugate), i.e. ¦Â-maltoside and ¦Â-maltotrioside, by sequencial glycosylation with almond ¦Â-glucosidase and CGTase.
