It is rich in nutrients and active substances, such as protein, flavonoids, sterols, polysaccharides, amino acids, minerals, terpenes, etc. And it has antioxidant, antibacterial, anti-tumor, immune regulating, and hypoglycemic effects. This article reviews the nutritional value, flavor substances, active ingredients, and physiological functions of <i>Boletus edulis</i>, analyzes the future research focus of the industry, and provides useful references for the deep processing, new product development, and pharmaceutical research and development of <i>Boletus edulis</i>.
