Study and Validation of Orthodiphenols in Olive Oil According to French Standard NF T 90-210 May 2009

Several physical and chemical methods were adopted for the determination of orthodiphenols in olive oil but they have never been subject to validation. This work aims to validate a method for extracting orthodiphenols in olive oil and their determination after reaction with molybdate and absorbance measurement according to French standard NF 90-210 May 2009, based on the study of the calibration function. The results reported valid and reliable method for the determination of orthodiphenols in olive oil at λ = 370 nm. Preliminary results of the validation to λ = 420 nm are presented and interpreted.
