FUNCIONAMIENTO Y TRANSPARENCIA EN LA CADENA DE VALOR: APLICACIóN AL CASO DEL ACEITE DE OLIVA EN ESPA AKeywords: Olive oil , value chain , transparency , trust , performance Abstract: The article analyse the olive oil sector within the framework of the value chain model, with special attention to performance and transparency. There is a descriptive analysis of the more significant dimensions in the food sector, mainly the innovation process and the interaction transparency-efficiency. As a consequence, the paper gives the main hints of the performance in the food chain. The main idea has been to combine theory and practise. Therefore, the value chain dimensions are applied to the olive oil market as a case study, following the trend in others European and American countries.
