Technological characteristic of giant squid dosidicus (Dosidicus gigas) and its rational useKeywords: giant squid dosidicus , technological characteristic , use. Abstract: The technological and biological characteristic of giant (Peruvian-Chilean) squid (Dosidicus gigas) inhabiting the southern-eastern part of the Pacific Ocean, are given. The dimension-mass and chemical composition of mantle and separate squid parts are presented; changes of biochemical indices depending on the squid body size are shown. It is supposed that taste – flavour of large squid is determined by the content of ammonium chloride. The Atlantic Research Institute of Marine Fisheries and Oceanography has developed a special technology for rational use of large squid fillet.
