Technochemical structure and functional and technological properties of underused fish raw materials of the Volga-Caspian basin

The objects of the research were redeye (Scardinius erythrophthalmus) and a silver carp (Carassius auratus). It has been proved that the chemical compound and fractional distribution of proteins of fish muscular tissue influence the functional and technological properties, namely water-retaining capacity and emulsifiability, gel formation, elasticity and the structure of forcemeat. It has been shown that forcemeat production from the investigated fish raw materials of the Volga-Caspian basin will possess similar structural and mechanical characteristics.
