Restauration et traduction : une question de philosophie

On peut faire de la restauration une mission de service public, ou une entreprise privée soumise à la loi du marché. Quel sens donner à cette activité ? Philosophiquement, la méthodologie est à réinventer. L’auteur propose pour cela de définir la restauration comme une traduction, c’est-à-dire une transmission en même temps qu’une transaction.
