Abstract:

虾青素(astaxanthin),是一种类胡萝卜素,也是类胡萝卜素合成的最高级别产物,呈深红色,化学结构类似于β-胡萝卜素。而β-胡萝卜素、叶黄素、角黄素、番茄红素等都是类胡萝卜素合成的中间产物,在自然界,虾青素是目前具有最强抗氧化活性的类胡萝卜素,其抗氧化活性是维生素E,β-胡萝卜素的500倍以上。虾青素还具有抗肿瘤、降血脂、抗动脉粥样硬化、增强免疫、延缓衰老等功能。主要有提取、合成两种方法。本文就虾青素目前的提取工艺、合成工艺及生物活性做一概述。
Astaxanthin, is a carotenoid and the highest grade product of carotenoid synthesis. It is dark red and has a chemical structure similar to β-carotene. Beta-carotene, lutein, canthaxanthin, lycopene, etc. are all intermediate products of carotenoid synthesis. In nature, astaxanthin currently is the carotenoid with the strongest antioxidant activity. The activity is more than 500 times that of vitamin E and β-carotene. Astaxanthin also has the functions of anti-tumor, lowering blood fat, anti-atherosclerosis, strengthening immunity, delaying aging and so on. There are mainly two methods of extraction and synthesis. This article gives an overview of the current extraction process, synthesis process and biological activity of astaxanthin.
